Food regulators like FSSAI and state and district food departments atleast in most of north india are not doing their duties to prevent consumers from carcinogenic adulterants.
Attached is a picture of a carbide ripened mango. When left for 4-5 days after purchase this is how It looks like.
Such is the effect of calcium carbide that even fruits kept next to it (pear) get affected. Imagine what happens to our bodies.
We will have a cancer epidemic in 10 years and we will all be wondering. We already are as cancer cases are reported so often now as compared to 10 years back.

Calcium carbide in contact with moisture produces acetylene gas which helps speed up the ripening process for some fruits. There are pros and cons of ripening of fruit by using calcium carbide: The unripe fruit does not get damaged during transportation / storage and we like to buy good looking fruit. The naturally ripened fruit will be softer and customers would hesitate to easily buy it and it would also need to be quickly sold and there would be loss to the supplier during transportation. This is why suppliers use calcium carbide to ripen the fruit in their warehouse near the market. Calcium carbide does have health hazards as already pointed out. You can find out if a fruit is ripened by using calcium carbide: - The fruit skin is green and yellow in patches. - A naturally ripened fruit will sink in a bucket of water. The best we can do, as consumers, is to thoroughly wash fruit after purchase and before consumption. more

Unless each and every government officer concerned is made responsible and accountable for checking food adulteration, food adulteration will continue unabated. This holds good for all areas of governanca. India is corrupt because citizens cannot punish the defaulting government officials for their acts of ommission and commission. Takr the case of road safety. You can see hoards of private vehicles in most unroadworthy condition plying on the roads. Ottos are running overloaded with 12-15 children going to school. Long steel rods are being transported on roofs of trucks right in front of the eyes of the traffic police! Roads are full of potholes. Unless honest and dedicated persons are elected, our fate will not change. So, the only alternative is to vote for such good people in the 2019 General Elections.
