100 % WHOLE WHEAT BREAD by BRITANNIA :

The past 10 years the question of whole Wheat Bread came to being . Since then many Bakeries have started bringing out Wheat Bread and Brown Bread [B.B.is supposed to be whole grain usually wheat ]. Breads made of Maida are white like naan and wheat bread with a brownish tinge . Some Bakeries market Brown bread though they don't claim 100% whole wheat grain . With 100 % wheat floor the bread becomes a bit brittle and if difficult to stay as slices. It is not so with Maida Bread . Some of them you feel the colour is derived from the colouring and not the natural colour of the wheat , though colouring is permitted.

So started trying other brands like Britannia and Modern Bread . They claim 100% as the attached picture shows. We have stuck on to this because there is the taste of whole wheat as we eat the bread and also the flavour of wheat while toasting .

It is not like olden days when there were no facilities refine and remove ingredients from food items . As a result we all were eating whole grain food.

So we have to know what we are consuming , what ingredients are removed in the name of refining and what else added to fulfil our Nutritional needs.

Maida and atta (the flour being used to make brown bread and a household ingredient to prepare chapati largely consumed by central & north indian people) both are made of wheat. The only difference is, maida is finely milled, refined & bleached either naturally due to atmospheric oxygen or using chemical bleaches and it contains only the starchy white part of the grain. Atta milled with husk, bran, germ of wheat making it slightly darker in colour and contains very small size granules making it reach in fiber and digestible. more  
Mr Daniel, my restaurant is in Bangalore. Unfortunately we cannot use organic ingredients as we would have to raise prices considerably. But we use the best 'normal' ingredients. Sometimes my organic farm products can be used, and we do so. But we don't produce everything a restaurant requires. more  
In fine restaurants, serving Italian/Continental cuisine or in modern bakeries, one can see many types of breads with a variety of ingredients. more  
Maida isadded for probably shape and texture . Plain 100 % wheat flower will end in brittle slices and break . May be the bread need to hold some moisture to keep it in shape . So favourable excipients are added . I am yet to see brown sandwitches , that is made of whole wheat flour . Must check in to see if other brands adds more than 52% whole wheat flour. Circler from Pune claimed that a Bakery adds just 10 - 15 % Maida. more  
Wheat bread is good for health, rather than Maida. Please prefer Wheat Bread and Brown Bread more
