In fact, I make an achar of whole lemons by cutting into half and then by cutting the half with scissors into fine ribbons along with the juicy pearls. Then I add ginger to it cutting ginger into fine shreds. Add some Aijwain, a few cloves and some pepper and required quantity of kala namak. I do not add any chilli powder. Then leave the whole mass for a week or ten days, checking for is any fungus (if salt is short in ratio, then fungus develops) One may add some lemon juice if there is dryness in the achar. After ten days the lemon peels and ginger taste wonderful and can be had along with phulkas, chapatis etc. It helps in digestion, keeps acidity in control and I have seen only good effects!
