It is very prevalent in busy high end hotels specially it happens in take home food only to realize that it is stale .one must be vigilant and reject it on the spot. more  

It is not possible to make any comment in the absence of description of the food. Foods which are sprinkled with finely grated coconuts, soaked in curds, sprinkled with raw sprouted moong/udad dal etc.. are likely to get spoiled even in 4 hrs., if not stored at a lower temperature. Sometimes past - I had suggested that every shop, selling processed food items - whether packed or bare, must prominently display the designation, address, phone no. and e-mail address of the fssai authority, in whose jurisdiction the shop is situated. more  

I din't think any food item gets spoiled with 4 hours of preparation even if the local atmospheric condition is very hot a temperature 48` or so. The shop keeper is apparently a cheat and was knowingly selling the spoilt food items. The matter should have been taken up with the local food department authorities first instead of asking FSSAI to introduce some new systems while licensing, which is time consuming. more  

Don't expect FSSAI to examine such things, when they fail to visit occasionally even to star hotels. more
