What oil is best for:
Frying
Healthy Cooking of Indian curries
flavouring

How often should one change oils? Can pure olive oil be used for cooking?

The quantity matters. Half a liter should be per head only. more  
It depends upon where you live. In north India it is mustard oil and sesame oil, in central India it is ground nut oil and in south India it is coconut oil. It is natural to use the oil which is produced abundantly in region where a person is born and lives. Sesame oil is generally considered beneficial in all climatic conditions. more  
The mustard, sunflower and sesame extracted through cold process is good for health. All refined, double refined oils should be avoided. more

Sunflower is not stable on high heats due to unstable fat content. Olive oil can't take heat its best drizzled. Oil should be avoided. I would disagree with anyone who says oil is necessary. Refined oil or any product is not needed. You can easily get good fats from whole foods. But if you have to use any oil then let it be sesame oil. Cold pressed organic can be used both for cooking and raw as on salads. Olive can be used for taste but preferable raw or low heat. Mustard oil is a decent oil and can be used for taste. Coconut oil is good too. I would stay away from any other oils if I were strict about my health. If there is not option of the above then peanut oil is a very stable oil for cooking. I would rank in the above list at the end but after Rice Bran oil which is also a good oil to cook. I think the most dangerous health concern is not the oil itself but the additives added to oil and the extraction process. Except for coldpressed organic oils and oils that are labelled "kachi Ghani"(but can't be too sure about these) all brands use anti-foaming and anti splashing agents in oil. You may have noticed oils don't splutter and foam like they used to. Don't for a moment think these companies are using it for your convinience. They are using it so that it reduces foaming and spillage while packing. These are dangerous chemicals. Apart from known health risks cancers, ulcers and liver damage it is ACID!. My friend who worked in a oil packing company told me that the workers used to add these additives without safety gear and they just add it without measurement. Once it fell on a workers hand and he had 3rd degree burns just like acid burns Yes it is diluted but that itching on the throat that you feel is nothing but the diluted acid burning your mucus membranes and vocal chords. Almost 14 chemicals are added during the entire refinement process. The process of RBD(refining Bleaching deodorising) included Refining through high heat. We all know we should not use resued oil. Here the oil is heated multiple times. then it is bleached with harsh chemicals like caustic soda then the smell is removed. If the oil is extracted using hexane(which is the case with almost all oils, just the other day my friend who wanted to start cold pressed groundnut oil found out that if he got groundnut at the cheapest rate still the cost of the extracted oil would cost him 192 rupees per liter. That is just extraction cost then you will have to add taxes, overheads, distribution costs and then packing etc, while groundnut oil price is as low as 160 rupees) as that gives maximum extraction. This involves boiling the raw material in hexane a petrochemical that is in between diesel and Kerosene. Then high heat is used to evaporate the hexane. They say no traces of hexane are found. But what they don't tell you is that 3 residual toxic chemicals are left behind. Also heating again. This is what makes almost all branded oils and even loose oils in the market very bad for health. It could be the sole reason for various lifestyle diseases like acidity, digestion problems, uclers and even disease like cancer liver problems etc for most people. So its either better to get cold pressed organic oils or get the oil extracted in a mill in front of your eyes. If not cold pressed then expeller pressed is good enough too. more  
Use oil as per your taste. However avoid refined oil. more
